Mrs Mansell highly recommends this spicy dish. She says that it’s a flavour sensation and a firm favourite in the Mansell household!
2 Chicken Breasts
2 pitta/tortilla wraps/naan breads
1 Garlic clove crushed
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp ground cardamom pods
1/2 tsp cayenne pepper
2 tsp smoked paprika
2 tsp salt
Pinch of ground pepper
2 tbsp lemon juice
3 tbsp olive oil
1 mug of Greek Yoghurt
1 garlic clove crushed
1 tsp cumin
1 teaspoon lemon juice
Salt & pepper to taste
Slice the chicken into small slices or chunks. Combine all marinade ingredients and cover the chicken mixing well to ensure well coated. Marinade for a good 4 hours at least but ideally overnight.
Mix all the sauce ingredients together and refrigerate until needed.
Once marinated cook the chicken strips on a griddle, they will char a little at the edges but that just adds to the flavour.
Once all cooked through serve in a warm pitta or any bread of your choice, I usually add some lettuce, cucumber, onion etc or whatever salad you like chopped up onto the bread too, then spoon the Sauce over it all. I also like to add some sweet chilli sauce out of the cupboard sometimes too for a bit of a kick.
TIP- the chicken can be frozen in a zip seal bag once coated in the marinade meaning it can be brought out one morning to defrost/marinade more and be a simple minimal effort tea that night. Great for busy families!
TIP- Can be cooked on a BBQ in the summer for even more yummy flavour!
TIP- Works great with Tofu for a vegetarian option (so I’m told 😬)
