Mrs Butler’s Sweet Potato Brownies

There’s always a lot of sweet stuff to eat around school (unless Mr Wheeler has got to it first) but Mrs R can’t eat sugar so Mrs Butler makes these brownies out of kindness – they don’t contain anything but natural sugar.

Vegan Sweet Potato Brownies (Low-Fat) Recipe | Eggless Cooking

(10 Brownies)
2 sweet potatoes
Handful of sesame seeds
240g ground almonds
120g buckwheat flour
14 dates (or chopped dates for ease)
4 tbsp raw cacao
2 tbsp agave nectar or date syrup
Pinch of salt

  1. Heat oven to 180
  2. Peel and cut the sweet potatoes and cook until soft. Add dates and potato to a
    blender and mix.
  3. Blend all the other ingredients together with the mix in a bowl.
  4. Place in a baking dish for about 20 minutes. Once cooked, leave to cool for about 10 minutes so it doesn’t fall apart.
